Ingredients:
1 aubergine
2 tbsp rapeseed oil
1 tbsp salt for the aubergine
1 small onion finely chopped
3 minced garlic, thumb of ginger grated
Sauce: 2 tbsp soy sauce, 1 tbsp my chilli garlic oil. (Check previous recipe) 1 tsp sugar, 2 tbsp rice white vinegar. 1 tbsp sesame oil. 2 tbsp siracha. 3 tbsp water. 2 tbsp corn starch slurry (1 tbsp corn flour + 2 tbsp water)
Handful fresh coriander
Finely chopped spring onion
Noodles to serve
Method:
Slice your aubergine length ways, and chop into small cubes.
Optional, but it really helps and if you have time; sprinkle 1 tbsp of salt over the aubergine. Leave for 15 minutes and squeeze out the water.
In a pan, add oil and fry the onions, after 2 minutes add the garlic and ginger and cook well for another 5 minutes.
Add the aubergine and cook until brown.
In a bowl mix the sauce and pour over the aubergine and cook down for another 2 minutes until thickens.
Finish with spring onion and coriander.
Pour sauce over boiled noodles,
Mix well and serve!
